Out of the cleaned fillets are cut off two pieces (tournedos) – of about 250 grams. Season meat with salt, spices, form it round and high and roast on the grill.
Place tournedos on the plate.
Roast two slices of chicken liver on the grill and season with salt. Also grill two heads of the mushrooms. Put a piece of liver and mushroom on each tournedo. Cover with madera sauce and serve with steamed vegetables.
